Vegan Meal Concepts for Fall + Winter!

Right now’s video options my favourite noodle soup, cozy jackfruit pasta and a barely completely different vegan buddha bowl. Excellent for fall and winter dinners.

#1 Straightforward Selfmade Pho

2 onions, roughly chopped
2 cloves garlic
a 2 inch piece of ginger (5 cm)
2 tsp olive or coconut oil, or sub with a couple of tbsp water
spices: 2 cinnamon sticks, 2 star anise, 1 tsp entire cloves, 1 bay leaf
Four cups vegetable broth (1 litre) + 2 cups water (500ml) , extra water if wanted
2 ½ tbsp tamari, soy sauce
1-2 tsp maple syrup, non-compulsory
salt to style, if wanted

200g of rice noodles, roughly if desired (7oz)

Additionally for every serving:
the mushrooms and tofu
a squeeze of lemon juice
leafy greens, sprouts …

Pan Fried Mushrooms + Tofu:

1 block smoked tofu
a handful of cremini mushrooms
1 tsp oil

Baked Mushrooms + Tofu:

1 block smoked tofu
a handful of cremini mushrooms
½ cup spelt flour (60g)
½ cup + 2 tbsp unsweetened non dairy milk (125ml + 2 tbsp)
½ tsp salt
½ tsp baking powder
1 tsp sriracha
1 tbsp contemporary lemon juice

→ yields Four huge bowls of soup

#2 Cozy Jackfruit + Lentil Pasta

200g cooked jackfruit (7oz)
1 onion, finely chopped (i didn’t do a very good job within the video lol)
1 clove of garlic, minced
1 tbsp tomato purée
2 tbsp ketchup
½ tsp smoked paprika
salt, if wanted

½ cup vegetable broth (125ml)
1 cup passata (250ml)

½ cup purple lentils, dried (100g)
1 cup vegetable broth (250ml)

250g pasta (8.Eight oz)

→ serves 3

#Three the German Buddha Bowl

3-Four small – medium sized potatoes

2 cups sauerkraut, cooked (290g)
2 onions
1 tbsp agave or maple syrup
1-2 tsp vegan butter


1-2 cups brussel sprouts (100-200g)
1-2 tsp olive oil

vegan sausages

dressing: 1 tbsp plain hummus + 1 tbsp lemon juice + 1 tsp agave + 1 tsp mustard

→ yields 2 bowls

    hey, im sure you checked but just wanted to let you know that vegetarian sausages can still be non vegan, because milk is often used in them to keep the consistency together as like a binding ingredient! Love all these recipes and im definitely gonna try them xo

    if all vegan food can look as good as this then i will have no problem transitioning to veganism but than again with my busy schedule i'm unable to selectively seek out vegan products

    Hi, my kitchen is a mess, so I can not show you in a vid, but there are easy ways to turn traditional German meals vegan. Just go with things like 'Rahmwirsing' or 'Kohlrouladen' and use soy granulate or jack fruit instead of meat and cuisine instead of cream. You can also cook a 'Grünkohl Eintopf' with smoked tofu and chorizo from wheaty (that's a good make for sausages btw). Sauerkraut or red cabbage are great with celery schnitzel (just use water flour and salt as egg). Keep up the good work!

    i love the idea to show some of your native vegan food! i'm croatian and vegan recipes with ingredients you can only buy in america don't really help me…. i wish we europeans would show off more of our traditional food. yeah, a lot of recipes are centred around meat but there's also a bunch of vegan meals, traditionaly eaten in lent.
