    I've made a very similar recipe..but no hot peppers for me (LOL), just put in frozen 3 pepper blend, onion, potatoes and seasoning. Was delicious. Could I ask you if you know what happened to Nick on Wo and Behold. I started watching his videos without realizing that the last one posted was over a year old…till I got through most of them…disappointing to not be able to see them anymore and his Mukbang with you on the show. That is how I came to find your channel too. Please update all of us who loved his channel as well as yours. Thank you.

    I am making this now. I am using small red potatoes, because that's what I had. I didn't peel them. So far, the onion and peppers smell great!

    This looks tasty. I think I’d throw it on a sheet pan just before it’s done, into the oven under the broiler to crisp it up for some crunchy texture

    YUM! Gonna have to try it with your spices. I make something similar, but I swap half the potato for sweet potato, and use red onion. For flavour I use smoked paprika, garlic and a little thyme. Then when cooked I toss through a heap of baby spinach. SO delish! I like to eat it with my home made smokey baked beans too if I have any, they're made for each other 🙂

    I understand that if you put your pepper tops in a bowl of plant based milk, you'll get yogurt. Who knew? Love the potato recipe, Dillon. Thanks for showing us how you do it. "Oh, yeh, mmm, hmm.
